Winter is truly here and cooking with cheese is one of our favourite ways to warm up.  A super easy and effective recipe is the Baked Camembert and there are many many ways to pull off this dish! Ricotta at Home

Cooking Ricotta at Home Recipe: Equipment & Ingredients: 2 Litres of un-homogenised milk Medium sized pot Colander/strainer and a bowl for drips Slotted Spoon Vinegar 50ml Cool boiled water (straight from your kettle) 25-30ml Thermometer Salt, to taste Method: Heat 2 litres of milk on your hot plate, stirring gently until the temperature reaches 90.C. Stirring prevents the milk from burning on the base of the pan. Swiftly stir in approximately 50mls of vinegar diluted with 50 mls of water. This will cause the milk to coagulate and the curd to rise to the surface. Allow pot to sit for about 30 seconds. A collaboration with Carême Pastry Prep: 10 min (plus 20 minute chill time) | Cook: 35 min | Serves: 4 Ingredients: 1 (375g packet) Carême All Butter Puff Pastry, defrosted 200g Barossa Valley Cheese Co. Barossa Camembert 1 egg, beaten Side salad, to serve Fresh baguette, to serve. Method: Preheat oven to 200.C. Unroll the pastry, place it onto a lightly dusted work surface, then dust with flour.
